Extract Format
This where you can choose from a CSV (comma separated), TSV (tab separated), or a vCard (VCF) extract format.
Include header record checkbox
Determines wether header record of field names precedes the data records (doesn't apply to VCard formats).
Don't include My Card ("me") checkbox
Should my contact card data be included in the data extract.

These match the Mac System Preferences -> Language & Text Formats.
